-1 package of fully cooked crumbled bacon
-2 cups diced onion
-1 cup diced celery
-1/2 cup chopped carrots
-1 can of chicken broth
-2 cups water
-5 large potatoes diced
- 2 tsp. chopped fresh parsley
-Minced garlic to taste
-2 cups half & half
-1 can evaporated milk
-1 cup all-purpose flour
1. Combine all ingredients in the crock-pot, except half & half, evaporated milk, and flour.
2. Cover. Cook on High 7 hours, stirring occasionally.
3. In a small bowl, whisk together the flour and half-and-half. Stir into the soup along with the evaporated milk. Cover, and cook on low for another 30 minutes before serving.
Variation: Top individual servings with shredded cheddar cheese.
